  • 1 tablespoon of pandan extract
  • 1 can (13.5 oz) of coconut milk
  • 1 teaspoon of baking powder
  • 2 large eggs
  • ¼ teaspoon of salt

  • Instructions

  • Preheat your oven to 375°F (190°C) and grease the madeleine mold.
  • Melt the unsalted butter in a small saucepan over low heat. Let cool slightly.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In another bowl, beat the eggs and granulated sugar until light and fluffy. Add the melted butter, coconut milk, and pandan extract, mixing until just combined.
  • Gradually fold the flour mixture into the wet mixture using a spatula, being cautious not to overmix.
  • Spoon the batter into the prepared madeleine molds, filling each cavity about three-quarters full.
  • Bake for 10 to 12 minutes or until golden brown. Rotate the pans halfway through.
  • Let the madeleines cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
