½ cup (115g) of unsalted butter, plus extra for greasing
¾ cup (150g) of granulated sugar
1 cup (125g) of all-purpose flour
1 tablespoon of pandan extract
1 can (13.5 oz) of coconut milk
1 teaspoon of baking powder
2 large eggs
¼ teaspoon of salt
Instructions
Preheat your oven to 375°F (190°C) and grease the madeleine mold.
Melt the unsalted butter in a small saucepan over low heat. Let cool slightly.
In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
In another bowl, beat the eggs and granulated sugar until light and fluffy. Add the melted butter, coconut milk, and pandan extract, mixing until just combined.
Gradually fold the flour mixture into the wet mixture using a spatula, being cautious not to overmix.
Spoon the batter into the prepared madeleine molds, filling each cavity about three-quarters full.
Bake for 10 to 12 minutes or until golden brown. Rotate the pans halfway through.
Let the madeleines cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
