1 cup fresh parsley leaves, packed
1 cup fresh breadcrumbs

2 tablespoons fresh thyme, finely chopped
3 cloves garlic, minced
Salt and black pepper, to taste
2 tablespoons olive oil
½ cup fresh mint leaves
1/3 cup pine nuts
1/3 cup grated Parmesan cheese
Juice of 1 lemon
Salt and pepper, to taste for the pesto
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the fresh parsley, breadcrumbs, rosemary, thyme, minced garlic, salt, pepper, and olive oil. Mix until well combined.
Generously season the rack of lamb with salt and pepper.
Brush a thin layer of Dijon mustard all over the lamb.
Pat the herb mixture evenly over the lamb, pressing it down to make sure it sticks.
