2 lbs of pork shoulder or chicken thighs
2 cans (15 oz each) of hominy
4 garlic cloves, minced
3 red chili peppers, dried or fresh
1 large onion, chopped
1 teaspoon of dried oregano

Instructions
In a large pot, add your pork shoulder or chicken thighs along with 10 cups of water. Bring to a boil over medium heat and reduce to a simmer. Skim off any impurities that rise to the surface.
Once the meat is tender (approximately 60 minutes), add the garlic, chopped onion, and oregano to the pot.
If using dried chili peppers, soak them in warm water for about 15 minutes. Blend the softened chilies with a bit of the broth to create a smooth paste.
