Ingredients
Scale
2 cups cooked, shredded chicken (rotisserie chicken works great!)
1 cup queso cheese dip (store-bought or homemade)
1 can (10 oz) red enchilada sauce
8 small corn or flour tortillas
1 cup shredded cheese (like cheddar or Monterey Jack)
1/2 cup diced onions (optional)
1/2 cup chopped fresh cilantro (for garnish)
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, queso cheese dip, half of your enchilada sauce, and diced onions (if using). Mix until everything is beautifully combined.
If you’re using corn tortillas, briefly microwave them for about 20-30 seconds to make them pliable.
Take a tortilla and spoon some of the chicken mixture into the center. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat with all tortillas.
Pour the remaining enchilada sauce over the rolled tortillas, ensuring all are well-coated. Sprinkle the shredded cheese on top.
Pop the dish into the preheated oven and bake for about 25-30 minutes or until the cheese is nicely melted and bubbly.
Once baked, garnish with chopped cilantro and a sprinkle of salt and pepper.
