1 medium, chopped onion

Instructions
Preheat your oven to 400°F (200°C). Cut the butternut squash in half and drizzle the insides with olive oil, sprinkling a generous pinch of salt and pepper. Place the squash face down on a lined baking sheet and roast for 40-50 minutes until it's tender and caramelized.
