  • 1 lb fresh salmon, skin removed and diced or 1 can (1415 oz) of salmon
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1 clove fresh garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped or 1 teaspoon dried dill
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained of excess water
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

  • Instructions

  • In a mixing bowl, combine the Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Stir well until everything is nicely incorporated.
  • Chop the fresh salmon finely, or if using canned salmon, drain and flake it into a bowl.
  • Add breadcrumbs, red onion, minced garlic, lemon juice, mustard, dill, and beaten egg to the salmon. Season with salt and pepper. Mix gently without overmixing.
  • Form the salmon mixture into patties, about 4 to 5 per batch. Chill them in the fridge to help hold their shape while cooking.
  • In a large skillet, heat olive oil over medium heat. Add the salmon patties and cook for about 4–5 minutes on each side until golden brown and cooked through.
  • Serve the cooked salmon burgers on a bun or lettuce wrap, topped with the homemade tzatziki and garnished with preferred toppings.
