1 pound (450g) sausage meat
1 sheet (about 17 oz or 480g) of frozen puff pastry, thawed
1 small onion, finely chopped
2 cloves of garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper, to taste
1 egg, beaten
Optional: 1/2 cup grated cheese of your choice
Fresh herbs for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a skillet, add a drizzle of olive oil and sauté the chopped onion until translucent (about 4-5 minutes). Add minced garlic and cook for another minute.
In a bowl, combine the sausage meat, sautéed onion and garlic, dried oregano, thyme, and season with salt and pepper. If you're adding cheese, fold it in gently.
Roll out the puff pastry into a rectangle about 1/8 inch thick on a floured surface.
Spoon the sausage mixture down the center of the pastry, forming a log, leaving some space on the edges.
Carefully wrap the edges of the pastry over the filling, pinching to seal completely.
Bring the two ends of the pastry log together to form a circle and pinch them to seal.
Brush the top of the wreath with the beaten egg.
Make shallow cuts along the top of the wreath to let steam escape.
Transfer to a parchment-lined baking sheet and bake for 25-30 minutes, or until golden brown.
