  • 1 sheet (about 17 oz or 480g) of frozen puff pastry, thawed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 egg, beaten
  • Optional: 1/2 cup grated cheese of your choice
  • Fresh herbs for garnish

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • In a skillet, add a drizzle of olive oil and sauté the chopped onion until translucent (about 4-5 minutes). Add minced garlic and cook for another minute.
  • In a bowl, combine the sausage meat, sautéed onion and garlic, dried oregano, thyme, and season with salt and pepper. If you're adding cheese, fold it in gently.
  • Roll out the puff pastry into a rectangle about 1/8 inch thick on a floured surface.
  • Spoon the sausage mixture down the center of the pastry, forming a log, leaving some space on the edges.
  • Carefully wrap the edges of the pastry over the filling, pinching to seal completely.
  • Bring the two ends of the pastry log together to form a circle and pinch them to seal.
  • Brush the top of the wreath with the beaten egg.
  • Make shallow cuts along the top of the wreath to let steam escape.
  • Transfer to a parchment-lined baking sheet and bake for 25-30 minutes, or until golden brown.
