Ingredients

  • 4 cups of vegetable broth
  • 1 can of black beans (15 oz), drained and rinsed
  • 1 cup of corn
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheese
  • 1 tablespoon of taco seasoning
  • 1 teaspoon of garlic powder
  • 1 onion, diced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

  • Instructions

  • In a large saucepan over medium heat, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Cook for about 5-7 minutes until thickened and creamy. Remove from heat and season with salt and pepper to taste.
  • In another skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent and fragrant. Add black beans, corn, diced tomatoes, taco seasoning, and garlic powder. Stir well and let it simmer for about 5 minutes.
  • In a greased 9×13 baking dish, spread half of the polenta evenly on the bottom. Top with the veggie and bean filling. Pour the remaining polenta on top, smoothing it out with a spatula.
  • Sprinkle shredded cheese generously over the top layer of polenta.
  • Preheat your oven to 375°F (190°C). Bake for about 25-30 minutes or until the cheese is bubbly and slightly golden.
  • Once baked, let it cool for a few minutes before serving. Garnish with freshly chopped cilantro.
