1 cup of polenta
4 cups of vegetable broth
1 can of black beans (15 oz), drained and rinsed
1 cup of corn
1 cup of diced tomatoes
1 cup of shredded cheese
1 tablespoon of taco seasoning
1 teaspoon of garlic powder
1 onion, diced
2 tablespoons of olive oil
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
In a large saucepan over medium heat, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Cook for about 5-7 minutes until thickened and creamy. Remove from heat and season with salt and pepper to taste.
In another skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent and fragrant. Add black beans, corn, diced tomatoes, taco seasoning, and garlic powder. Stir well and let it simmer for about 5 minutes.
In a greased 9×13 baking dish, spread half of the polenta evenly on the bottom. Top with the veggie and bean filling. Pour the remaining polenta on top, smoothing it out with a spatula.
Sprinkle shredded cheese generously over the top layer of polenta.
Preheat your oven to 375°F (190°C). Bake for about 25-30 minutes or until the cheese is bubbly and slightly golden.
Once baked, let it cool for a few minutes before serving. Garnish with freshly chopped cilantro.
