  • 1 pound of boneless, skinless chicken breast, thinly sliced
  • 2 cups of fresh mushrooms, sliced (shiitake or button)
  • 1 cup of broccoli florets
  • 1 cup of snow peas
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of fresh ginger, minced or grated
  • 3 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of cornstarch mixed with 2 tablespoons of water
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

  • Instructions

  • Start by marinating the chicken. In a bowl, mix the thinly sliced chicken with 1 tablespoon of soy sauce, a sprinkle of salt, and a bit of pepper. Let it sit while you prep the veggies.
  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  • Add the marinated chicken to the hot skillet, spreading it out evenly. Stir-fry for about 4-5 minutes, or until cooked through and slightly golden.
  • Remove the chicken from the skillet and set it aside. In the same skillet, add the mushrooms and stir-fry for about 2 minutes until they start to soften.
  • Toss in the broccoli, snow peas, red bell pepper, green onions, garlic, and ginger. Stir-fry for another 3-4 minutes.
  • Return the chicken to the skillet with the veggies. Stir everything together.
  • Drizzle in the remaining 2 tablespoons of soy sauce and the oyster sauce if using. Mix well.
  • Pour in the cornstarch mixture and stir continuously for about 1-2 minutes until coated and glossy.
  • Taste and adjust for salt and pepper if needed.
