2 cups long-grain parboiled rice
1/2 cup vegetable oil
1 large onion, finely chopped
1 red bell pepper, blended
1 green bell pepper, chopped
2–3 medium tomatoes, blended
3 cups chicken or vegetable broth
1 tablespoon tomato paste
2–3 garlic cloves, minced
1 teaspoon ginger, grated
1–2 teaspoons cayenne pepper
1 teaspoon dried thyme
1 teaspoon curry powder
Salt to taste
Optional protein: shrimp, chicken, or tofu
Optional: fresh herbs like parsley or cilantro for garnish
Instructions
Rinse your rice under cold running water until the water runs clear. Optionally soak it for 30 minutes.
In a large pot over medium heat, add the vegetable oil and let it warm up.
Sauté the finely chopped onions for about 5 minutes until golden brown.
Stir in the blended red bell pepper and chopped green bell pepper. Cook for 5-7 minutes.
Add the blended tomatoes and tomato paste, mixing well. Cook for about 10 minutes until thickened.
Add minced garlic, ginger, cayenne pepper, thyme, curry powder, and salt. Simmer for 5 minutes.
Add the rinsed rice, stirring to coat every grain in the sauce.
Pour in the chicken or vegetable broth. Stir gently to combine.
Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes. Check occasionally.
Once cooked, remove from heat, let sit for an additional 5-10 minutes, then fluff the rice gently with a fork.
