1 lb ribeye steak, thinly sliced
1 large onion, sliced
1 green bell pepper, sliced
2 cloves fresh garlic, minced
4 slices provolone cheese
Salt and pepper to taste
2 tablespoons olive oil
4 hoagie rolls
Optional toppings: hot sauce, sautéed mushrooms, or giardiniera
Instructions
Thinly slice the ribeye against the grain. Optionally, freeze the steak for 30 minutes to make slicing easier.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the sliced onions and peppers for 5-6 minutes until soft. Add minced garlic and cook for another minute.
Push the veggies to the side and add the remaining tablespoon of olive oil. Increase heat to medium-high and add the ribeye. Season with salt and pepper, cooking until browned (about 5-7 minutes).
Reduce heat to low and place provolone cheese over the steak mixture to melt, covering with a lid for even melting.
Slice hoagie rolls in half and toast them lightly if desired.
Scoop the steak mixture into the toasted rolls, adding any optional toppings.
