1 cup of cooked calamari, sliced into rings
1 cup of cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/4 red onion, thinly sliced
1/4 cup of fresh parsley, chopped
1/4 cup of olive oil
3 tablespoons of lemon juice
1 teaspoon of Dijon mustard
Salt and pepper to taste
Instructions
Prepare the seafood: In a medium pot, bring salted water to a boil. Add the shrimp and scallops, cooking them for about 2-3 minutes until they turn pink and opaque. Drain and run under cold water to stop the cooking process. Set aside.
Add the calamari: If using fresh calamari, blanch them in boiling water for just 30 seconds, then drain and cool.
