1 pound of shrimp (peeled and deveined)
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1 cup cucumber, diced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
2 tablespoons olive oil
Salt and pepper to taste
1 jalapeño, seeded and minced (optional)
Instructions
Start by cooking the shrimp. In a large skillet over medium heat, add a drizzle of olive oil. Toss in the shrimp and season with a pinch of salt and pepper. Cook for about 2-3 minutes per side until they turn pink and opaque. Keep an eye on them so they don’t overcook.
Once cooked, remove the shrimp from the skillet and let them cool slightly.
In a large bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
In a small bowl, whisk together the lime juice, olive oil, and a sprinkle of salt and pepper.
Add the cooked shrimp to the bowl with the veggies. Drizzle the dressing over everything and give it a gentle toss.
If you’re feeling spicy, toss in the minced jalapeño.
Let the salad sit for about 10 minutes before serving.
