  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 jalapeño, seeded and minced (optional)

  • Instructions

  • Start by cooking the shrimp. In a large skillet over medium heat, add a drizzle of olive oil. Toss in the shrimp and season with a pinch of salt and pepper. Cook for about 2-3 minutes per side until they turn pink and opaque. Keep an eye on them so they don’t overcook.
  • Once cooked, remove the shrimp from the skillet and let them cool slightly.
  • In a large bowl, combine the diced avocados, cherry tomatoes, red onion, cucumber, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, and a sprinkle of salt and pepper.
  • Add the cooked shrimp to the bowl with the veggies. Drizzle the dressing over everything and give it a gentle toss.
  • If you’re feeling spicy, toss in the minced jalapeño.
  • Let the salad sit for about 10 minutes before serving.
