8 ounces of spaghetti
4 ounces of sun-dried tomatoes, drained and chopped
2 cups of fresh spinach, roughly chopped
1 cup of heavy cream
2 tablespoons of olive oil
2 cloves of garlic, minced
Salt and pepper, to taste
Parmesan cheese, grated, for serving (optional)
Fresh basil, for garnish
Instructions
Start by bringing a large pot of salted water to a boil. Once boiling, add the spaghetti and cook according to package instructions until al dente, reserving about a cup of pasta water before draining.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Toss in the chopped sun-dried tomatoes and let them cook with the garlic for about 2-3 minutes until softened.
Reduce the heat to low and slowly pour in the heavy cream, stirring gently to combine with the sun-dried tomatoes and garlic. Let it simmer for about 5 minutes until slightly thickened.
Add the fresh spinach and cook until wilted, about 2-3 minutes.
Once the pasta is cooked and drained, add it to the skillet and toss until evenly coated. Adjust consistency with reserved pasta water if necessary.
Season with salt and pepper to taste.
Serve immediately, garnishing with grated Parmesan cheese and fresh basil.
