  • 4 ounces of sun-dried tomatoes, drained and chopped
  • 2 cups of fresh spinach, roughly chopped
  • 1 cup of heavy cream
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, grated, for serving (optional)
  • Fresh basil, for garnish

  • Instructions

  • Start by bringing a large pot of salted water to a boil. Once boiling, add the spaghetti and cook according to package instructions until al dente, reserving about a cup of pasta water before draining.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Toss in the chopped sun-dried tomatoes and let them cook with the garlic for about 2-3 minutes until softened.
  • Reduce the heat to low and slowly pour in the heavy cream, stirring gently to combine with the sun-dried tomatoes and garlic. Let it simmer for about 5 minutes until slightly thickened.
  • Add the fresh spinach and cook until wilted, about 2-3 minutes.
  • Once the pasta is cooked and drained, add it to the skillet and toss until evenly coated. Adjust consistency with reserved pasta water if necessary.
  • Season with salt and pepper to taste.
  • Serve immediately, garnishing with grated Parmesan cheese and fresh basil.
