  • Rinse the chicken thighs under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
  • In a bowl, whisk together the honey, soy sauce, sriracha, minced garlic, grated ginger, paprika, and ground cumin until well combined.
  • Place the chicken in a Ziploc bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Marinate in the fridge for at least 30 minutes.
  • Heat olive oil in a skillet over medium-high heat. Carefully add the marinated chicken, searing it for about 5-7 minutes on one side until golden brown, then flip and cook for another 5 minutes.
  • Reduce heat to medium-low. Drizzle the reserved marinade into the skillet and let it bubble around the chicken. Cook for an additional 5-8 minutes until cooked through.
  • Remove the skillet from heat and transfer the chicken to a plate. Let it rest for about 5 minutes.
