1 sheet of puff pastry, thawed
2 cups of fresh spinach, chopped
1 cup of feta cheese, crumbled
1 large egg, beaten (for egg wash)
2 cloves of garlic, minced
1 tablespoon of olive oil
1 teaspoon of dried oregano
Salt and pepper, to taste
Sesame seeds or poppy seeds, for topping (optional)
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a pan over medium heat, add the olive oil and sauté the minced garlic for about 30 seconds until fragrant.
Add the chopped spinach and a pinch of salt and pepper to the pan. Cook for a few minutes until wilted. Remove from heat and let it cool slightly.
In a mixing bowl, combine the sautéed spinach, crumbled feta, and oregano. Taste for seasoning and adjust salt and pepper if needed.
Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into rectangles (about 3×5 inches).
Place a generous tablespoon of the spinach mixture in the center of each rectangle.
Cut the edges of each rectangle into strips (about 1 inch wide) but leave the middle intact.
Twist each strip away from the filling to create a spiral effect.
Brush each twist with the beaten egg and sprinkle with seeds if desired.
Place the twists on the lined baking sheet, spacing them out.
Bake for 15-20 minutes, or until golden brown and flaky.
