Ingredients
Scale
2 pieces (6-8 oz each) of ribeye or sirloin steak
1/2 cup of bourbon
1 cup of heavy cream
4 cloves of minced garlic
2 tablespoons of butter
Salt (to taste)
Pepper (to taste)
Instructions
Begin by taking your steaks out of the refrigerator at least 30 minutes before cooking. This helps them reach room temperature, ensuring even cooking. Season both sides generously with salt and pepper.
In a heavy-duty skillet or cast-iron pan, melt 1 tablespoon of butter over medium-high heat. Once the butter is foaming, place the steaks in the skillet. Sear each side for about 4-5 minutes for medium-rare, depending on thickness. Use a meat thermometer for accuracy (135°F/57°C for medium-rare). Remove steaks and let them rest on a plate, loosely covered with foil.
In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 30 seconds until fragrant. Pour in the bourbon, scraping up any browned bits from the bottom of the pan. Allow the bourbon to reduce for 5 minutes.
Lower the heat and stir in the heavy cream. Let the sauce simmer gently for 5-7 minutes, stirring frequently until it thickens to your desired consistency. Adjust seasoning with salt and pepper.
Slice the rested steaks against the grain and arrange them on plates. Drizzle the bourbon garlic cream sauce generously over the top. For a finishing touch, sprinkle freshly chopped parsley for a burst of color.
