2 ½ cups of all-purpose flour
1 teaspoon of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
1 cup of unsalted butter, softened
1 cup of granulated sugar
1 large egg
1 teaspoon of vanilla extract
½ cup of fresh strawberries, pureed
½ cup of powdered sugar, for dusting
Preheat your oven to 350°F (175°C). While that lovely warmth is building up, we’ll start mixing our ingredients.
In a medium bowl, mix the flour, baking powder, baking soda, and salt. Set aside.
In another large bowl, beat the softened butter and granulated sugar together until it's creamy and fluffy, for about 2-3 minutes.
Crack in the egg and add the vanilla extract, then beat until smooth and well combined.
Gently fold in the fresh strawberry puree.
Gradually add in your dry mixture to the wet batter, stirring until just combined.
Use a cookie scoop or your hands to form small balls (about 1 inch) and place them on a parchment-lined baking sheet.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack and lightly dust them with powdered sugar.
