4 cups vegetable or chicken broth
1 cup fresh corn kernels
1 small onion, finely chopped
2 cloves fresh garlic, minced
1/2 cup dry white wine
2 tablespoons olive oil or butter
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
In a medium saucepan, bring the broth to a gentle simmer.
In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
Pour in the Arborio rice and sauté for about 2 minutes until slightly translucent around the edges.
If using white wine, add it now and stir until mostly absorbed by the rice.
Gradually add the warm broth, one ladle at a time, stirring constantly until the rice absorbs the liquid (about 20-25 minutes).
Five minutes before the risotto is done, add the fresh corn kernels and stir until warmed.
Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.
