2 medium-sized sweet potatoes, peeled and sliced into rounds
2 tablespoons of olive oil
1 teaspoon of salt
½ teaspoon of black pepper
1 teaspoon of garlic powder
1 teaspoon of holiday herbs (thyme, rosemary)
¼ cup of chopped pecans
2 tablespoons of maple syrup
¼ cup of grated parmesan cheese (optional)
Instructions
Preheat your oven to 425°F (220°C). Peel sweet potatoes and slice into ¼ inch thick rounds.
In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, garlic powder, and holiday herbs.
Line a baking sheet with parchment paper and spread the sweet potato rounds in a single layer.
Bake for about 20 minutes, flipping halfway through, until tender and golden brown.
Remove from oven, drizzle with maple syrup, sprinkle chopped pecans and optional parmesan cheese, and return to the oven for an additional 2-3 minutes.
