1 lb, dried Black-eyed peas
1 Smoked turkey leg
1 medium Onion, diced
3 cloves Garlic, minced
1 medium Carrot, diced
1 medium Green bell pepper, diced
6 cups Vegetable broth
2 Bay leaves
1/2 tsp Cayenne pepper
Salt to taste
Black pepper to taste
Instructions
Start by rinsing the dried black-eyed peas under cold water to remove any impurities. If you have time, soak them in water for at least 4 hours or overnight for a quicker cooking time.
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, carrot, and green bell pepper. Sauté for about 5 minutes until the vegetables are tender.
Stir in the minced garlic, bay leaves, cayenne pepper, salt, and black pepper to the sautéed vegetables. Cook for an additional 2 minutes.
Add the smoked turkey leg to the pot, along with the soaked black-eyed peas and the vegetable broth. Bring the mixture to a boil.
Once boiling, reduce the heat to a low simmer. Cover the pot and let it cook for about 75 minutes.
After cooking, remove the turkey leg from the pot. Let it cool slightly, then shred the meat off the bone and stir it back into the peas.
Check the seasoning and adjust salt and pepper to taste.
Serve hot, garnished with chopped parsley or green onions.
