4 medium fresh peaches, sliced
1/4 cup bourbon
1 cup sugar
1 1/2 cups all-purpose flour
1/2 cup (1 stick) butter, softened
1 1/2 tsp baking powder
1/4 tsp salt
2 large eggs
1 tsp vanilla extract
Instructions
Mix the sliced peaches with bourbon and half of the sugar (1/2 cup) in a medium size bowl. Let them marinate for about 15 minutes.
Preheat your oven to 350°F (175°C).
Melt 1/4 cup of butter in a 9-inch round cake pan over medium heat. Sprinkle the remaining 1/2 cup of sugar evenly across the bottom of the pan and arrange the marinated peach slices over it.
Cream together the remaining 1/4 cup of softened butter with sugar until fluffy. Beat in the eggs, one at a time, and stir in the vanilla extract.
