1 pizza dough (12–14 inch)
1 cup cooked chicken, shredded or diced
1/2 cup peanut sauce
1 cup mozzarella cheese, shredded
1/2 cup red bell pepper, sliced thinly
1/2 cup carrots, julienned
1/4 cup green onions, chopped
1 tablespoon cilantro, chopped (optional)
1 tablespoon sesame seeds, toasted (optional)
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat as well.
On a floured surface, roll out your pizza dough to about 12–14 inches in diameter.
Transfer the dough to a pizza peel dusted with flour or onto a lightly greased baking sheet.
Spoon and spread the peanut sauce across the surface of the dough, leaving about half an inch around the edges.
Layer on the shredded chicken, followed by the mozzarella, sliced bell peppers, and carrots.
Slide your pizza into the oven and bake for about 12-15 minutes, or until the cheese is melty and bubbly.
Once out of the oven, sprinkle with chopped green onions, cilantro, and toasted sesame seeds.
Allow the pizza to cool for a minute, then slice and serve.
