  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¾ cup strong brewed espresso (cooled)
  • 1 tablespoon coffee liqueur (optional)

  • Instructions

  • In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, vanilla extract, and a pinch of salt until smooth. Let it sit for about 15 minutes.
  • Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about ¼ cup of the batter into the pan, swirling to spread it evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly browned. Flip and cook for another minute. Transfer to a plate and repeat until all batter is used.
  • While the crêpes are cooling, beat the heavy cream and powdered sugar in a bowl until stiff peaks form. Gently fold in the mascarpone cheese and vanilla extract until just combined.
  • In a shallow dish, combine the cooled espresso and coffee liqueur (if using). Dip each crêpe quickly into the espresso mixture, coercing each side without soaking it.
  • On a serving platter, lay a crêpe down and spread a generous layer of the mascarpone filling across it. Layer crêpes and filling until all are used.
  • Carefully roll the stack of crêpes into a tight cylinder starting from one end. Wrap it in plastic wrap and chill in the refrigerator for at least 2 hours.
  • Once chilled, unwrap the roll and slice it into pieces. Dust with cocoa powder or top with chocolate shavings for that extra touch!
