2 lbs of fresh salmon fillet
1 cup of brown sugar
½ cup of sea salt
2 tbsp of black pepper
¼ cup of lemon juice
2 tbsp of dill weed (fresh) or 1 tbsp (dried)
2 tbsp of olive oil
Pecan or hickory wood chips for smoking
Instructions
Begin by rinsing your fresh salmon fillet under cold water. Pat it dry gently with paper towels.
In a mixing bowl, combine brown sugar, sea salt, black pepper, and dill weed.
