  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks of celery, chopped
  • 1 can (15 oz) of diced tomatoes
  • 4 cups of vegetable broth
  • 2 cups of spinach or kale, chopped
  • 2 bay leaves
  • Salt and pepper to taste

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they're translucent and fragrant.
  • Stir in the minced garlic, carrots, and celery. Cook them for another 5 minutes, allowing the vegetables to soften.

  • Stir in the drained white beans, diced tomatoes, vegetable broth, bay leaves, and salt and pepper. Bring to a simmer, then reduce heat to low and simmer for 20 minutes.
