2 cans (15 oz each) of white beans (canned or dried)
2 tablespoons of olive oil
1 medium onion, diced
4 cloves of garlic, minced
2 medium carrots, sliced
2 stalks of celery, chopped
1 can (15 oz) of diced tomatoes
4 cups of vegetable broth
2 cups of spinach or kale, chopped
2 bay leaves
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they're translucent and fragrant.
Stir in the minced garlic, carrots, and celery. Cook them for another 5 minutes, allowing the vegetables to soften.
Add the chopped spinach or kale. Cook for about 3 minutes until they are wilted.
Stir in the drained white beans, diced tomatoes, vegetable broth, bay leaves, and salt and pepper. Bring to a simmer, then reduce heat to low and simmer for 20 minutes.
