1 sheet of puff pastry, thawed
1 wheel of brie cheese (about 8 ounces)
1/4 cup of honey (or maple syrup for a vegan option)
1/2 cup of assorted fruit preserves (fig, raspberry, or your favorite)
1 tablespoon of fresh rosemary or thyme, finely chopped (optional but recommended)
Flour, for dusting
1 egg (for egg wash, optional)
Preheat your oven to 400°F (200°C).
On a lightly floured surface, roll out the puff pastry to smooth it out. Cut it into squares—about 3 inches each.
Place each pastry square into a muffin tin, pressing it down to form a cup.
Cut the brie wheel into small wedges and place one piece in each pastry cup.
Drizzle honey over the brie, then add a spoonful of your favorite fruit preserves. If desired, sprinkle some chopped herbs on top.
If using egg wash, beat the egg in a small bowl and brush it over the exposed edges of the pastry.
