1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs, room temperature
1 teaspoon vanilla extract
½ cup milk
1 ½ teaspoons baking powder
¼ teaspoon salt
Food coloring (optional)
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract (for frosting)
Sprinkles or edible glitter (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Line a cupcake tin with your favorite liners.
In a large mixing bowl, whisk together the flour, baking powder, and salt. Set this aside.
In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. Optionally, add a few drops of food coloring at this stage.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir gently until combined.
Scoop the batter into the prepared cupcake liners, filling them about 2/3 of the way full.
Pop your cupcake tray into the oven and bake for about 18-20 minutes. The cupcakes should be golden and spring back when gently pressed.
Once baked, let them cool in the pan for 5 minutes before transferring to a wire rack.
In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar, mixing on low until combined.
Pour in the heavy cream and vanilla extract. Beat on high until the frosting is light and fluffy, about 3-5 minutes. Adjust consistency as needed with cream or powdered sugar.
Optionally, add food coloring to match the Valentine’s theme.
