  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • Food coloring (optional)
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Sprinkles or edible glitter (for frosting)

  • Instructions

  • Preheat your oven to 350°F (175°C). Line a cupcake tin with your favorite liners.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt. Set this aside.
  • In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. Optionally, add a few drops of food coloring at this stage.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir gently until combined.
  • Scoop the batter into the prepared cupcake liners, filling them about 2/3 of the way full.
  • Pop your cupcake tray into the oven and bake for about 18-20 minutes. The cupcakes should be golden and spring back when gently pressed.
  • Once baked, let them cool in the pan for 5 minutes before transferring to a wire rack.
  • In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar, mixing on low until combined.
  • Pour in the heavy cream and vanilla extract. Beat on high until the frosting is light and fluffy, about 3-5 minutes. Adjust consistency as needed with cream or powdered sugar.
  • Optionally, add food coloring to match the Valentine’s theme.
