2 tablespoons milk
1/2 cup bell peppers, diced
1/2 cup spinach, chopped
1/4 cup onion, finely chopped
1/2 cup shredded cheese

Instructions
Start by chopping up those vibrant veggies. Dice your bell peppers, chop the spinach, and finely chop the onion.
In a medium bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
Grab a non-stick skillet, and drizzle a little olive oil or spray it with cooking spray to prevent sticking. Heat it over medium heat.
Toss the chopped onions and bell peppers into the pan. Sauté them for about 3-4 minutes until they’re soft.
Pour your egg mixture into the pan, letting it cover the veggies evenly. Keep an eye on it; we want it just set but still moist.
