1 whole fish (about 2–3 lbs; a whole trout or snapper)
4 tablespoons of unsalted butter, softened
4 cloves of garlic, minced
2 tablespoons of fresh dill, chopped
1 lemon, sliced
Salt and pepper to taste
Olive oil for drizzling
Extra lemon wedges for serving
Preheat your oven to 400°F (200°C).
Clean your whole fish if it’s not already; rinse under cold water and pat dry with paper towels.
In a small bowl, mix the softened butter, minced garlic, dill, and a pinch of salt and pepper until well combined.
Gently slather half of the garlic and dill butter all over the fish, ensuring to get into the cavity.
Place lemon slices both inside the fish and on top.
Lightly grease a baking dish with olive oil and place your fish in it. Drizzle a little more olive oil on top and season with salt and pepper.
Bake for about 25-30 minutes or until the fish is cooked through and flakes easily with a fork.
Once done, take the fish out of the oven, and smear the remaining garlic and dill butter on top while it's still warm.
Garnish with extra dill and lemon wedges before serving.
