2 medium carrots, diced
2 stalks of celery, diced
3 cloves of garlic, minced
1 medium zucchini, diced
1 cup of green beans, cut into pieces
1 can (14.5 oz) of canned diced tomatoes
4 cups of vegetable broth
1 can (15 oz) of kidney beans, drained and rinsed
1 tablespoon of Italian seasoning
Salt and pepper to taste
1 cup of uncooked small pasta (e.g., small shells)
Fresh parsley for garnish
Instructions
Prepare your ingredients by chopping the onion, dicing the carrots, celery, garlic, zucchini, and cutting the green beans.
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the onions are translucent.
Stir in the minced garlic and diced zucchini. Cook for an additional 3-4 minutes.
Add the green beans, canned diced tomatoes (with juice), vegetable broth, and kidney beans. Sprinkle in the Italian seasoning, salt, and pepper, stirring to combine.
Bring the soup to a gentle boil, then reduce to low heat. Cover and let it simmer for 30-40 minutes.
In a separate pot, cook the pasta according to package instructions. Drain and set aside.
Once the soup has simmered, add the cooked pasta. Mix thoroughly and let cook for another 5-10 minutes. Adjust consistency with additional broth if necessary.
