  • 1 can (14.5 oz) of canned diced tomatoes
  • 4 cups of vegetable broth
  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste
  • 1 cup of uncooked small pasta (e.g., small shells)
  • Fresh parsley for garnish

  • Instructions

  • Prepare your ingredients by chopping the onion, dicing the carrots, celery, garlic, zucchini, and cutting the green beans.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the onions are translucent.
  • Stir in the minced garlic and diced zucchini. Cook for an additional 3-4 minutes.
