  • 2 cups of shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) of diced tomatoes
  • 2 cups of beef broth
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • 1 cup of mixed vegetables (optional)

  • Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until they're fragrant and translucent, about 3 minutes. Add the ground beef, cooking until browned, about 5-7 minutes. Drain excess grease.
  • Stir in the uncooked rice, diced tomatoes, beef broth, and mixed vegetables (if using). Bring to a simmer, then cover and cook on low for 20 minutes.
  • Remove from heat and stir in 1.5 cups of cheese until melted. Season with salt and pepper as needed.
