1 lb of ground beef
1 cup of white or brown rice
2 cups of shredded cheddar cheese
1 medium onion, chopped
2 cloves of garlic, minced
1 can (14.5 oz) of diced tomatoes
2 cups of beef broth
2 tbsp of olive oil
Salt and pepper to taste
1 cup of mixed vegetables (optional)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until they're fragrant and translucent, about 3 minutes. Add the ground beef, cooking until browned, about 5-7 minutes. Drain excess grease.
Stir in the uncooked rice, diced tomatoes, beef broth, and mixed vegetables (if using). Bring to a simmer, then cover and cook on low for 20 minutes.
Remove from heat and stir in 1.5 cups of cheese until melted. Season with salt and pepper as needed.
Preheat the oven to 350°F (175°C). Transfer the mixture to a greased 9×13-inch casserole dish. Top with remaining cheese and bake for 30 minutes until the cheese is bubbly and golden.
Let the casserole rest for 5-10 minutes before serving.
