2 cups cooked shredded chicken
2 poblanos, roasted and peeled
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup cream or cream cheese
Salt and pepper to taste

Start by cooking the chicken until it’s fully done. You can use either grilled or rotisserie chicken for an easy shortcut.
Roast the poblanos over an open flame or under the broiler until the skin is charred. Let them cool, then peel the skin off.
While the poblanos are cooling, chop your onions, garlic, and any other veggies you want to add.
In a big pot, sauté the onions and garlic until they're soft. Add in the chopped poblanos and cook for a few more minutes.
Pour in the chicken broth and bring it to a simmer. Stir in the shredded chicken and any other seasonings you enjoy.
For a creamier texture, blend part of the soup directly in the pot. Serve warm with your favorite toppings.
