12 oz of linguine
1 lb of boneless, skinless chicken breasts, diced
1/2 cup of unsalted butter (1 stick)
4 cloves of fresh garlic, minced
1 tsp of smoked paprika
1 tsp of onion powder
1/2 tsp of cayenne pepper (or to taste)
Salt and black pepper, to taste
1/4 cup of chopped fresh parsley, for garnish
Grated Parmesan cheese, for serving (optional)
Instructions
Start by boiling a large pot of salted water. Once it’s at a rolling boil, add the linguine and cook according to package instructions until al dente. Remember to reserve about 1/2 cup of pasta water before draining it.
In a large skillet, over medium heat, melt 1/4 cup of the butter. Add the diced chicken, season with salt and black pepper, and cook until golden brown, about 5 to 7 minutes.
When the chicken is nearly cooked through, add the minced garlic. Stir and let cook for another minute until fragrant.
Add the smoked paprika, onion powder, and cayenne pepper. Stir well to coat the chicken with the spices.
Add the remaining 1/4 cup of butter to the skillet. Stir until melted, adding reserved pasta water if the sauce is too thick.
Add the drained linguine to the skillet, tossing to coat all the noodles in the sauce. Adjust with more reserved pasta water if needed.
