200 grams of pasta
1 can (400 grams) of black beans, drained and rinsed
1 can (400 grams) of pinto beans, drained and rinsed
1 bell pepper, chopped
1 red onion, chopped
2 green onions, sliced
1 avocado, diced
3 tablespoons of olive oil
2 tablespoons of lime juice
1 teaspoon of garlic powder
1 teaspoon of cumin
1 teaspoon of salt
1/2 teaspoon of pepper
Cook the pasta. Boil it until it's nice and tender. Drain and rinse it in cold water to cool it down.
Prep the veggies. Chop up the bell peppers and red onion into small pieces. Slice the green onions and pit and dice the avocado.
Mix the beans. Drain and rinse the black beans and pinto beans. Toss them into a large bowl with the cooled pasta.
Add the veggies. Stir in the chopped bell peppers, red onion, and green onions. Mix until everything is evenly distributed.
Make the dressing. In a separate bowl, whisk together some olive oil, lime juice, garlic powder, cumin, salt, and pepper.
