2 cups of rotisserie chicken, shredded
1 tablespoon of olive oil
1 medium onion, diced
2 cloves of garlic, minced
8 ounces of mushrooms, sliced (cremini or button)
4 cups of chicken broth
1 cup of heavy cream
2 cups of fresh spinach (optional)
1 teaspoon of dried thyme
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Heat the olive oil in a large pot over medium heat.
Add the diced onion and sauté for about 3-5 minutes until translucent.
Add the minced garlic and sauté for another minute.
Add the sliced mushrooms and sprinkle with a pinch of salt. Cook for about 5-7 minutes until browned.
Pour in the chicken broth and stir until combined. Bring to a gentle simmer.
Add the shredded rotisserie chicken and dried thyme. Simmer for about 10 minutes.
Lower the heat and stir in the heavy cream and fresh spinach if using. Heat for 2-3 minutes without boiling.
Season with salt and pepper to taste before serving.
