  • 1 tablespoon of olive oil
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 8 ounces of mushrooms, sliced (cremini or button)
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 2 cups of fresh spinach (optional)
  • 1 teaspoon of dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

  • Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté for about 3-5 minutes until translucent.
  • Add the minced garlic and sauté for another minute.
  • Add the sliced mushrooms and sprinkle with a pinch of salt. Cook for about 5-7 minutes until browned.
  • Pour in the chicken broth and stir until combined. Bring to a gentle simmer.
  • Add the shredded rotisserie chicken and dried thyme. Simmer for about 10 minutes.
  • Lower the heat and stir in the heavy cream and fresh spinach if using. Heat for 2-3 minutes without boiling.
