Ingredients
Scale
4 cups of fresh broccoli florets (about 2 medium heads)
1 medium onion, diced
3 cloves of garlic, minced
3 cups of vegetable broth
1 cup of heavy cream
1 cup of shredded smoked gouda cheese
2 tablespoons of olive oil
Salt, to taste
Pepper, to taste
Optional toppings: croutons, extra cheese, or a drizzle of olive oil
Instructions
Prep your ingredients: Start by washing and chopping your broccoli into bite-sized florets. Dice the onion and mince the garlic.
Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and a pinch of salt and cook until it becomes translucent, about 5 minutes. Then, toss in the minced garlic and sauté for an additional minute.
Add the broccoli: Once the onion is soft and the garlic is fragrant, add the broccoli florets to the pot. Stir for a few minutes to combine the flavors.
Pour in the broth: Add the vegetable broth to the pot. Bring it to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the broccoli is tender.
Blend it up: Use an immersion blender to puree the soup until smooth, or carefully transfer the soup to a blender in batches.
Stir in the cream and gouda: Return the pureed soup to the pot and stir in the heavy cream and shredded smoked gouda. Keep the heat on low until the cheese is melted.
Season to taste: Adjust with salt and pepper as needed. Optionally add red pepper flakes for some heat.
Serve it up: Ladle the soup into bowls and finish with your choice of toppings.
Enjoy!
