8 oz of penne or fettuccine pasta
2 tablespoons of olive oil
2 boneless, skinless chicken breasts, diced
3 cloves of fresh garlic, minced
1 cup of sun-dried tomatoes in oil, drained and chopped
1 cup of heavy cream
½ cup of grated Parmesan cheese
Salt and pepper, to taste
Fresh basil, for garnish (optional)
Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain and set aside.
In the same pot, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and no longer pink in the center, about 5-7 minutes.
Stir in the minced garlic and chopped sun-dried tomatoes. Cook for another minute until fragrant.
Pour in the heavy cream and bring it to a gentle simmer. Add the Parmesan cheese and stir until it melts into the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
Add the drained pasta to the creamy sauce and toss until the noodles are well coated. Sample a bite and adjust the salt and pepper as needed.
