  • 1 tablespoon of olive oil
  • 1 pound of Italian sausage (bulk or casing removed)
  • 1 medium of onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 1 can (14 ounces) of diced tomatoes, undrained
  • 4 cups of chicken or vegetable broth
  • 1 can (15 ounces) of cannellini beans, rinsed and drained
  • 2 cups of fresh spinach or kale
  • 1 cup of heavy cream
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish (optional)

  • Instructions

  • Prep your ingredients: Make sure your veggies are chopped, sausage is out of the casing, and everything is ready to go.
  • Heat the oil in a large pot: Place a large pot or Dutch oven over medium heat and add the olive oil. Let it warm up for a minute.
  • Cook the sausage: Add the sausage to the pot and cook until browned, breaking it up with a wooden spoon as it cooks (about 5-7 minutes).
  • Add the onion, garlic, carrot, and celery: Stir these in and cook for another 5 minutes until the veggies start to soften. You want the onions to be translucent.
  • Pour in the diced tomatoes: Scrape up delicious brown bits from the bottom of the pot.
  • Add the broth: Pour in the chicken or vegetable broth and stir to combine.
  • Beans and seasonings: Stir in the cannellini beans and Italian seasoning. Season with salt and pepper to taste. Let it simmer for about 10 minutes.
  • In with the greens: Toss in your spinach or kale and let it wilt into the soup. Stir well and let it simmer for another 5 minutes.
  • Finish with cream: Gently stir in the heavy cream and let it simmer for another 5 minutes.
  • Taste and adjust: Give your soup a taste test, adding more salt or pepper if needed, and garnish with freshly grated Parmesan.
