Ingredients

1 liter of full-fat milk
2 tablespoons lemon juice
1 cup sugar
1 teaspoon cardamom powder
2 tablespoons ghee
Pistachios for garnishing, as desired
Almonds for garnishing, as desired
A pinch of saffron, if desired
Instructions
In a heavy-bottomed pan, bring the milk to a boil over medium heat. Keep stirring to prevent it from sticking.
Once it’s boiling, reduce the heat to low. Gently add the lemon juice a little at a time while stirring continuously until the milk curdles.
Once the whey has separated completely, pour the mixture into a muslin cloth to drain the excess liquid. Rinse the curds under cold water and squeeze out the extra moisture.
In the same pan, add the curds back along with sugar, ghee, and cardamom powder. Cook on low heat, stirring continuously until thickened, about 8-10 minutes.
Once the mixture holds together, pour it onto a greased plate. Mix in saffron if using for color.
Top with chopped pistachios or almonds while warm and press down gently.
Allow to cool completely at room temperature. Cut into squares or diamonds once set.
