Ingredients

  • 1 liter of full-fat milk
  • 2 tablespoons lemon juice
  • 1 cup sugar
  • 1 teaspoon cardamom powder
  • 2 tablespoons ghee
  • Pistachios for garnishing, as desired
  • Almonds for garnishing, as desired
  • A pinch of saffron, if desired

  • Instructions

  • In a heavy-bottomed pan, bring the milk to a boil over medium heat. Keep stirring to prevent it from sticking.
  • Once it’s boiling, reduce the heat to low. Gently add the lemon juice a little at a time while stirring continuously until the milk curdles.
  • Once the whey has separated completely, pour the mixture into a muslin cloth to drain the excess liquid. Rinse the curds under cold water and squeeze out the extra moisture.
  • In the same pan, add the curds back along with sugar, ghee, and cardamom powder. Cook on low heat, stirring continuously until thickened, about 8-10 minutes.
  • Once the mixture holds together, pour it onto a greased plate. Mix in saffron if using for color.
  • Top with chopped pistachios or almonds while warm and press down gently.
  • Allow to cool completely at room temperature. Cut into squares or diamonds once set.
