400 grams of dried mixed fruit (e.g., raisins, currants, sultanas)
100 grams of glacé cherries
100 grams of chopped walnuts
250 grams of unsalted butter
200 grams of soft brown sugar
4 large eggs
250 grams of all-purpose flour
1 teaspoon of baking powder
2 teaspoons of your favorite spices (e.g., cinnamon, nutmeg, allspice)
Zest of 1 orange
100 ml of dark rum or orange juice
Instructions
Preheat your oven to 150°C (300°F).
In a large bowl, combine the dried mixed fruit, glacé cherries, and chopped walnuts. Add a splash of dark rum or orange juice and let soak.
In a separate bowl, cream together the unsalted butter and soft brown sugar until light and fluffy.
Beat in the eggs one at a time, ensuring each is well incorporated.
Sift together the all-purpose flour, baking powder, and spices. Gradually fold into the wet mixture.
Gently fold the soaked fruit mixture into the batter until evenly distributed.
Line a traybake tin (approximately 30x20cm) with baking paper. Pour the mixture into the tin and smooth the top.
Bake for about 70 minutes, or until a skewer inserted into the center comes out clean.
Allow to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
