12 large Fresh Medjool Dates
4 oz of Feta Cheese, crumbled
2 oz of Parmesan Cheese, finely grated
½ cup of Walnuts, chopped
2 tablespoons of Honey
1 tablespoon of Olive Oil
Sea Salt to taste
Black Pepper to taste
Instructions
Start by preheating your oven to 350°F (175°C).
In a mixing bowl, combine crumbled feta cheese and grated parmesan cheese. Mix them gently with a fork, seasoning with a pinch of sea salt and freshly cracked black pepper.
Carefully open each date, remove the pit, and fill it with the cheese mixture.
In a small frying pan over medium heat, drizzle in the olive oil, add the chopped walnuts, and sauté for about 2-3 minutes until golden. Stir in the honey to coat the walnuts.
Place stuffed dates on a lined baking sheet and drizzle remaining honey-walnut mixture over them. Bake for 10 minutes until warm and caramelized.
Let the dates cool slightly, transfer to a platter, and garnish with walnuts or honey. Enjoy!
