4 fillets of white fish (like cod or tilapia)
2 tablespoons of olive oil
4 cloves of garlic, minced
1 can (14 oz) diced tomatoes
1/2 cup pitted Kalamata olives, roughly chopped
2 tablespoons capers, drained
1 teaspoon red pepper flakes
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Lemon wedges for serving
Instructions
Start by heating olive oil in a large skillet over medium heat.
Add minced garlic and red pepper flakes to the pan and sauté for about 30 seconds until fragrant.
Pour in the diced tomatoes (with their juices), then add the chopped olives and capers. Stir and simmer for 5-7 minutes.
