4 pieces of boneless, skinless chicken breasts
4 cloves of minced garlic
2 tablespoons of chopped fresh rosemary
2 tablespoons of olive oil
2 lbs of peeled and cubed potatoes for mashed potatoes
4 tablespoons of butter
1 lb of sliced carrots for glazing
2 tablespoons of honey
Salt and pepper to taste
Instructions
In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Coat the chicken breasts and let marinate for at least 30 minutes.
Bring a large pot of salted water to a boil. Add the cubed potatoes and simmer until fork-tender (about 15-20 minutes). Drain, add butter, salt, and milk, then mash until smooth.
In a separate pan, bring water to a boil and add the sliced carrots. Cook for about 5 minutes until tender. Drain water, add honey, and cook on low to glaze the carrots (about 5 minutes).
Preheat your oven to 375°F (190°C). Heat a skillet over medium-high heat. Sear marinated chicken breasts for 3-4 minutes until golden brown. Transfer to the oven and bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
Plate the garlic herb chicken with a generous serving of mashed potatoes and glazed carrots.
