  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 large potato, diced
  • 1 cup of mushrooms, sliced
  • 1 small zucchini, diced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 8 cups of water
  • Salt and pepper to taste
  • Fresh herbs for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it’s translucent and fragrant, about 5 minutes.
  • Stir in the minced garlic and sauté for another minute.
  • Add the sliced carrots and celery to the pot and let it cook for about 3–4 minutes.
  • Next, toss in the diced potato, mushrooms, and zucchini. Stir well.
  • Sprinkle in the dried thyme and oregano.
  • Pour in your water and bring everything to a boil. Reduce heat to low and let it simmer for about 30 minutes.
  • Taste the broth and add salt and pepper to your liking.
  • You can strain the broth for a smoother texture or leave it chunky.
  • Ladle your broth into a mug or bowl, garnish with fresh herbs, and enjoy.
