2 tablespoons of olive oil
1 medium onion, chopped
2 cloves of garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 large potato, diced
1 cup of mushrooms, sliced
1 small zucchini, diced
1 teaspoon of dried thyme
1 teaspoon of dried oregano
8 cups of water
Salt and pepper to taste
Fresh herbs for garnish
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it’s translucent and fragrant, about 5 minutes.
Stir in the minced garlic and sauté for another minute.
Add the sliced carrots and celery to the pot and let it cook for about 3–4 minutes.
Next, toss in the diced potato, mushrooms, and zucchini. Stir well.
Sprinkle in the dried thyme and oregano.
Pour in your water and bring everything to a boil. Reduce heat to low and let it simmer for about 30 minutes.
Taste the broth and add salt and pepper to your liking.
You can strain the broth for a smoother texture or leave it chunky.
Ladle your broth into a mug or bowl, garnish with fresh herbs, and enjoy.
