  • 4 pounds of bone-in beef short ribs
  • 2 tablespoons of olive oil
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 2 cups of beef broth
  • 1 cup of dry red wine
  • 2 tablespoons of tomato paste
  • 2 tablespoons of soy sauce
  • 1 tablespoon of brown sugar
  • 1 teaspoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 bay leaf
  • Chopped fresh parsley for garnish (optional)

  • Instructions

  • Pat the short ribs dry with paper towels. Season generously with salt and pepper.
  • Turn on your Instant Pot and select the 'Sauté' function. Add the olive oil. Once hot, add the short ribs in batches, browning each side for about 3-4 minutes. Remove the ribs and set them aside.
  • In the same pot, add the chopped onion and cook for about 2-3 minutes until softened. Toss in the garlic and sauté for an additional minute.
  • Add the red wine to the pot and scrape the bottom with a wooden spoon.
  • Stir in the beef broth, tomato paste, soy sauce, brown sugar, thyme, and bay leaf. Mix well.
  • Carefully place the short ribs back into the pot.
  • Secure the lid on your Instant Pot and set to 'Manual' for 45 minutes on high pressure.
  • Once the cooking time is up, allow for a natural release for 15 minutes.
  • To thicken the sauce (optional), remove the short ribs and set the Instant Pot back to 'Sauté.' Let the sauce bubble until it reduces to your liking.
  • Ladle the sauce over the short ribs and sprinkle with fresh parsley.
