4 pounds of bone-in beef short ribs
2 tablespoons of olive oil
1 medium onion, chopped
4 cloves of garlic, minced
2 cups of beef broth
1 cup of dry red wine
2 tablespoons of tomato paste
2 tablespoons of soy sauce
1 tablespoon of brown sugar
1 teaspoon of dried thyme
1 teaspoon of salt
1/2 teaspoon of black pepper
1 bay leaf
Chopped fresh parsley for garnish (optional)
Instructions
Pat the short ribs dry with paper towels. Season generously with salt and pepper.
Turn on your Instant Pot and select the 'Sauté' function. Add the olive oil. Once hot, add the short ribs in batches, browning each side for about 3-4 minutes. Remove the ribs and set them aside.
In the same pot, add the chopped onion and cook for about 2-3 minutes until softened. Toss in the garlic and sauté for an additional minute.
Add the red wine to the pot and scrape the bottom with a wooden spoon.
Stir in the beef broth, tomato paste, soy sauce, brown sugar, thyme, and bay leaf. Mix well.
Carefully place the short ribs back into the pot.
Secure the lid on your Instant Pot and set to 'Manual' for 45 minutes on high pressure.
Once the cooking time is up, allow for a natural release for 15 minutes.
To thicken the sauce (optional), remove the short ribs and set the Instant Pot back to 'Sauté.' Let the sauce bubble until it reduces to your liking.
Ladle the sauce over the short ribs and sprinkle with fresh parsley.
