1 cup of pomegranate juice
3 tablespoons of granulated sugar
1 tablespoon of gelatin powder
2 cups of heavy whipping cream
1 teaspoon of vanilla extract
Pomegranate seeds for garnish
Mint leaves for garnish (optional)
Instructions
In a small bowl, combine the pomegranate juice and granulated sugar. Sprinkle the gelatin over the juice and let it bloom for about 5 minutes while you prepare the whipping cream.
In a large mixing bowl, pour in the heavy whipping cream and add the vanilla extract. Using an electric mixer, beat the cream on medium-high speed until soft peaks form.
Once the gelatin has bloomed, heat the pomegranate juice mixture in a small saucepan over low heat until the gelatin and sugar dissolve completely. Do not let it boil!
Gently fold the warm pomegranate juice mixture into the whipped cream using a spatula.
Pour the mousse into individual cups or a large serving bowl and cover them with plastic wrap. Chill in the refrigerator for at least 2-3 hours.
Just before serving, sprinkle pomegranate seeds on top and, if you like, add a few mint leaves for garnish.
