1 cup of creamy peanut butter
1 cup of granulated sugar
1 cup of packed brown sugar
2 large eggs
2 teaspoons of vanilla extract
2½ cups of all-purpose flour
1 teaspoon of baking soda
½ teaspoon of salt
48 chocolate kisses, unwrapped
Extra granulated sugar for rolling the cookies
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat with an electric mixer on medium speed until well blended—about 1 minute. Add the eggs and vanilla, and continue to mix until smooth.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the peanut butter mixture. Mix just until combined.
Scoop tablespoon-sized amounts of dough and roll them into balls. Roll each ball in granulated sugar to coat.
Place the sugar-coated dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes, or until lightly golden.
As soon as you remove the cookies from the oven, gently press a chocolate kiss into the center of each cookie. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
