1 cup of orzo pasta
1 lb of raw shrimp, deveined and peeled
1 cup of feta cheese, crumbled
3 tablespoons of olive oil
2 tablespoons of fresh lemon juice
Zest of 1 lemon
3 cloves of garlic, minced
1 cup of cherry tomatoes, halved
1/4 cup of fresh parsley, chopped
Salt and pepper to taste
Instructions
Begin by bringing a large pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions, about 8-10 minutes, or until al dente. Drain the orzo and set aside.
While the orzo is cooking, preheat your oven to 400°F (200°C). In a large bowl, combine the shrimp with olive oil, lemon juice, garlic, salt, and pepper. Mix until the shrimp are well coated.
Spread the shrimp mixture onto a lined baking sheet in a single layer. Roast in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque.
In a large mixing bowl, combine the cooked orzo, cherry tomatoes, feta cheese, lemon zest, and chopped parsley. Gently toss to combine.
Once the shrimp are ready, fold them into the orzo mixture. Taste and adjust seasoning based on your preference. Serve warm, garnished with parsley.
