2 sheets of gelatin or 1 tablespoon of gelatin powder

Instructions
If using gelatin sheets, immerse them in cold water for 5–10 minutes until softened. For powder, sprinkle it over a quarter cup of cold water and let it bloom for about 5 minutes.
In a large mixing bowl, whip the heavy cream until soft peaks form.
In another bowl, combine the pumpkin puree, sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
Melt the gelatin in a small saucepan if you used sheets. If using powder, stir it into the pumpkin mixture.
Gently fold in the whipped cream to the pumpkin mixture until smooth.
Transfer the mousse to serving dishes and chill for at least one hour.
